As we know….breakfast is the most important meal of the day. Over the past year or so I have been working to find healthier alternatives to my favorite foods. One of my favorite things for breakfast on the weekends is pancakes. So, in an effort to be wiser in my choice, I wanted to find another way to make them. While researching I found that you can use bananas to make flour-less pancakes. That’s right….B-A-N-A-N-A-S. The following recipe makes 2 servings and is between 200-300 calories.
- 1 ripe banana
- 2 eggs (egg whites optional)
- 1/4 teaspoon vanilla extract (optional)
- 2 tablespoons of preferred cooking oil
- A handful of preferred nuts (optional, for crunch)
- For toppings and sweetness (syrup substitute) use any fresh fruit
Take all of these ingredients and combine them into a blender and blend. The consistency should be nice and smooth.
Then you add them to your skillet as you would regular pancakes. Once you see it begin to bubble on the top side, it is time to flip. Make sure to cook until golden brown on each side. Once the pancakes are done cooking, add your toppings of banana, strawberries, blueberries, or any other preference of fresh fruit as a topping. Adding syrup is an option, but then it makes these not so healthy!
